Air fryer French Fries… How much secrets could this recipe possibly hide? Well, a lot as it seems! One of the main reasons for owing an air fryer is to enjoy our favorite fries without guilt. So, finding the ideal way to ‘fry’ them had become a somewhat personal challenge!

No matter how many recipes I had tried, none came close to the texture and flavor of classic deep-fried potatoes. They might be crispy, but inside, they were ’empty.’ After several mediocre or even failed attempts, I found the most delicious and straightforward way to cook my favorite fries with the following recipe.

Some tips to help you prepare the perfect potatoes in the air fryer:

Just like in the classic cooking method, wash, peel the potatoes and try to cut them into the same size for uniform cooking.

Soak the potatoes in water to release their starch for at least 20 minutes. Removing the starch helps them become even crispier.

Before cooking the potatoes, dry them well with kitchen paper towels. In the air fryer, there’s no risk of burning due to hot oil, but water’s moisture doesn’t let the potatoes become crispy.

Double frying makes food crispy on the outside and soft on the inside. Starting the cooking process at low temperature, makes potatoes cook inside and soften. After removing them from the heat and letting them cool for a while, we then fry them again. This time at a high temperature to make the exterior crust and make them crispy.

Bonus hint: we can leave our potatoes between the two stages for quite some time. We can do the first cooking and set them aside until we prepare our main dish. A few minutes before serving, we proceed to the second stage, ensuring that all our dishes will be at the same temperature when served.”

Instructions

  1. Start by washing the potatoes, peel them and cut them in sticks using a knife or a mandolin slicer.

  2. Put them in a bowl for 10' to release starch to make them crispy when cooked. If you are not planning to cook them immediately keep them longer in the water to avoid turning brown.

  3. Drain them well using a kitchen paper towels.

  4. Place the drained fries in a bowl, sprinkle with olive oil and mix well.

  5. Remove them from the air fryer and let them cool for at least 10'. You can leave them longer at this stage if you are not planning to serve them immediately and proceed to the next step once ready.

  6. Preheat the air fryer to 190C, place them back inside and cook them for another 14'-15' flipping halfway.
